Chardonnay 82%, Viognier 18%. Limited series of 900 bottles
Latour de France village was the historic border of the Kingdom of France with Spain, vineyards overlooking
the Mediterranean Sea. Red wines are classified Côtes du Roussillon Villages. Chardonnay and Viognier are not
authorised varieties for this AOP so this wine is classified IGP Côtes Catalanes.
The two varieties are hand-picked separately, taking account of the different maturation periods. After a gentle press, the settled juice starts fermenting with wild yeasts in a small stainless-steel tank and is then transferred to 500 litre French-oak barrels to finish alcoholic fermentation where a partial malolactic fermentation occurs. The wine is aged in new, 2nd and 3rd use barrels on fine lees for 18 months prior to bottling.
A delicate bouquet with notes of acacia flowers, tropical fruits and lime zest. In the mouth the wine is full-bodied and silky in texture, with minerality and a hint of honey; lime and white peach on the mid-palate and lemon zest in a finish full of freshness. This wine is finely structured and complex
A big wine that complements big flavours – a lovely apéritif with black or green olives, it will accompany starters like chicken liver pâté or a well-peppered foie gras. Exceptional with St. Jacques scallops, lobster or veal in cream and mushroom sauce. Try with mature cheese, an aged Comté, a ripe Camembert or with Roquefort; enjoy with fruit desserts (apricots, apples, pears) and with sorbets.
