Chablis Fournillon is a family-run domaine managing 23 hectares of vines rooted in the region's famous Kimmeridgian soils. These soils are said to impart the fabled minerality in Chablis wines, and here's a textbook example. Based in the tiny village of Bernouil, just north-east of Chablis, they bottle less than 10% of their production so remain relatively unknown. The wines are splendidly typical of the region – crisp and mineral but with an underlying generosity, making them wonderful yet restrained partners for food.
