Domaine Wilfried is run by siblings Wilfried and Réjane Pouzoulas, whose family has been making wine in Rasteau, Southern Rhône, for five generations. Their vineyards are certified organic and planted with traditional Rhône varieties like Grenache, Syrah, Mourvèdre, Carignan, and Cinsault. Some of their wines carry the prestigious Rasteau and Cairanne AOC designations (Cairanne being a recent addition to the official village Cru list in 2018).
In both vineyard and cellar, their approach is minimal intervention. They use no chemicals, and favour neutral vessels like concrete to preserve the finesse and character of their wines. Only minimal SO2 is used if necessary.
Their Côtes du Rhône bottling offers a fragrant nose full of spice and ripe fruit, while the palate delivers juicy strawberry, blackberry, and rose petal notes. A touch more structure comes from a longer extraction and the addition of Carignan. The wine is named Paradis Perdus or "Paradise Lost" because the vineyard, despite its exceptional terroir, was left out of the official Cairanne AOC classification.
