From their 4ha of organic vineyards in Central Otago Folding Hill craft utterly sublime Pinot Noir. The warmth of the Bendigo subregion and meticulous work in the vineyard gives the wines a lovely core of ripe red fruit. In the cellar they work in an old-world fashion - fermentation with wild yeast, 11 months ageing in French oak and bottling without fining or filtration.
