True to its name, Pavette (“little peacock”) delivers a wine that’s vibrant and full of charm. Sourced from the coastal vineyards of Santa Barbara County, this Pinot Noir reflects the region’s cooling influences, bringing freshness and precision to a naturally generous fruit profile.

Fermented in open-top tanks with a touch of whole bunch inclusion, the wine builds gentle structure and aromatic lift. It is then aged for six months in a combination of French oak barrels (65%) and stainless steel (35%), striking a careful balance between texture and bright fruit expression.

Juicy and lifted, with ripe raspberry and cherry at the forefront, layered with subtle savoury, woodsy notes. The palate is supple and vibrant, with lively acidity giving shape and energy to the fruit, finishing fresh and beautifully balanced.

A natural partner for roast chicken, grilled salmon, mushroom dishes or charcuterie, but equally enjoyable slightly chilled on its own.
