The grapes were carefully hand-picked, gently pressed and the juice allowed to settle in cool, stainless steel tanks, to allow for better integration while still protecting the delicate aromatics. Fermented to near-dryness, the wine was then aged in French and American oak barrels, only 15% of which were new. This process of small barrel ageing allowed the wine to slightly concentrate without adding heavy, toasty notes to mask the freshness of the variety.
This Viognier has an enticing floral bouquet, with aromas of honeysuckle, guava and butter. The palate is plush with flavours of fresh ripe apricot, lychee, and just a hint of toasty brioche.
