Vincent Couche Vin de France “Voulez Vous Couche Avec Moi?” is the fun, sparkly side project of Vincent Couche, a biodynamic Champagne and Burgundy producer.
It’s labelled Vin de France, but the vineyards come from a well-known sparkling region. The blend is 65% Pinot Noir and 35% Chardonnay. Grapes are hand-harvested and pressed in whole bunches, with about 30% fermented in barrel and the rest in stainless steel. After 6–12 months on the lees, it’s disgorged unfiltered, with no added sugar or sulfites.
Floral and mineral, with citrus, apricot, and quince. Fresh and easy drinking.
