The finest of Pouilly Fumés. Some years ago, André Dezat bought 4.5 hectares of particularly well-sited vineyard near Tracy, which has been expanded a little each year to a total of 15 hectares, with parcels in other communes including St. Andelain and Nozet. Of their 15 hectares, 65% are from the clay/limestone pebbles, 25% limestone and clay and 10% flint.
The grapes are hand harvested and fermented and aged in 1/3 new oak barrels, 1/3 1 year old barrels and 1/3 2 year old oak barrels. The wines undergo bâtonnage every 2 weeks and spend 10 months on their fine lees and are bottled the August after harvest.
