A sweet and elegant sherry, produced from the “soleo” process which involves sun-drying the Pedro Ximénez grapes to obtain a great richness in sugars before they are pressed. It is then left to rest for 12 months and, when the period comes to an end, it is stored in American oak barrels to age for at least another 20 years.
The 1980 vintage is taken care of with exclusivity, from the harvest to the raisining, obtaining a unique personality with the appearance of dark mahogany and slow movement in glass. On the nose it has deep raisined plums, notes of sweet spices like cinnamon, freshly baked cookies, in addition to charred wood aromas. The palate is luscious and very balanced, sweet with great acidity and a light, elegant bitter touch.
It is a great pairing for soft, mature cheeses, chocolate desserts and nuts.
