Surely this is the time of year when we are allowed a treat! So let's look at a classic from Champagne.
The Robert family have been producing Grand Cru Champagne for many generations. Bertrand Robert's passion came from growing up in the family vineyards as a small child. There is a lot of care in production, where the family tries to preserve biodiversity amongst the vines.
This is a 100% Chardonnay vintage grower-champagne born of exquisite provenance and judicious decision-making. The grapes, which come entirely from the Grand Cru vineyards of Le Mesnil sur Oger, were fermented naturally in small oak barriques and lees aged for 10 months.
Bottle maturation lasted six years, resulting in a finely balanced champagne with superb creaminess and autolytic brioche notes overlaying a pure, uplifting line of acidity. The finish is complex, long and moreish.

This was my second visit to Butlers Wine Cellar and on both occasions the service has been wonderful.
