Barolo Ravera, Elvio Cogno 2016 Magnum

The Elvio Cogno farm produces the great wines of the Langhe region by conducting about fifteen hectares of owned vineyards in Novello, one of the eleven municipalities in the province of Cuneo where the production of Barolo DOCG is allowed.

The Barolo Ravera is made from Nebbiolo grape and sub-variety Lampia and Michet, it is born from the historical cru of Novello: a land that expresses itself with the finesse of the aromas, the sapidity of the flavors and the great complexity. The grapes are grown at a 380 metres altitude and is vinified in stainless steel, it is then aged in Slovenian oak for 24 months and then kept on its lees for further 90 days, to then finish refining the wine in the bottle for 6 months before release.  

The colour is intense garnet red, lively, brilliant, with slight orange reflections. On the nose it appears frank, elegant and powerful; hints of rose, mint and tobacco which over time turn to spicy aromas such as - coffee, licorice, truffle and finally leather and minerals. On the palate it appears full, round, with great structure and good balance; reminiscent of plum jam and blackberry. The finish is fresh and harmonious.  Characteristics over the years, reach classic elegance and composure over time.

It is usually paired beautifully with cured meats, game, large roasts, aged but not spicy cheeses such as Pecorino and Parmigiano Reggiano.
