Bibi Graetz has definitely earned the title of cult winemaker. He’s a true iconoclast, even by Tuscan standards - a former artist and self-taught producer who’s rejected both the winemaking handcuffs of the Chianti DOCG and the international varieties favoured by the Super Tuscans.
Bibi’s path is very much his own. In the vineyard, he champions old vines and native Tuscan varieties. In the winery (located in a medieval castle no less) it’s all indigenous yeasts, free-run juice and maximum fruit expression.
This fresh, zesty white from the iconic coastal Maremma region is a blend of Vermentino, Trebbiano and Ansonica. The grapes were hand-harvested, gently pressed and cold-fermented in stainless steel to retain a melange of fruity and floral aromas. After perfumed orange and peach blossom comes fresh citrus, then pears and riper exotic fruit. Elegant, clean and clocks in at just 12% alcohol.
