Chardonnay and Viognier are not\u003cbr\u003eauthorised varieties for this AOP so this wine is classified IGP Côtes Catalanes.\u003c\/p\u003e\n\u003cp\u003eThe two varieties are hand-picked separately, taking account of the different maturation periods. After a gentle press, the settled juice starts fermenting with wild yeasts in a small stainless-steel tank and is then transferred to 500 litre French-oak barrels to finish alcoholic fermentation where a partial malolactic fermentation occurs. The wine is aged in new, 2nd and 3rd use barrels on fine lees for 18 months prior to bottling.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eA delicate bouquet with notes of acacia flowers, tropical fruits and lime zest. In the mouth the wine is full-bodied and silky in texture, with minerality and a hint of honey; lime and white peach on the mid-palate and lemon zest in a finish full of freshness. This wine is finely structured and complex\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eA big wine that complements big flavours – a lovely apéritif with black or green olives, it will accompany starters like chicken liver pâté or a well-peppered foie gras. Exceptional with St. Jacques scallops, lobster or veal in cream and mushroom sauce.
