Domaine de L'Enclos is the new face of the Bouchard family. Bouchard has been a mainstay in the region of Chablis for decades, they were previously known as a large scale negociant. Now under the control of Romain and Damien they only work with their own vineyards and have changed the focus of the winery to producing quality not quantity.
The wine we have chosen to stock is one of their premier cru wines. It comes from a tiny half hectare plot, planted in 1971, and farmed organically. The old, healthy vines produce fruit with superb concentration and complexity.
It is fermented with native yeasts and rests on its lees for 12 months before release. Chablis can vary wildly in its style from light and insipid to super rich. This is a fine example, with focused concentrated fruit flavours, and has a sense of precision and quality about it. There are stone fruit and citrus flavours with a rounded texture, it is very drinkable already, but will also age for many years.
This top quality Chablis is a delight on its own but would of course match well to oysters, or fish dishes and perhaps Epoisse or Comte cheese.
