Didier Defaix comes from a long family tradition of vine-growers and is the son of Bernard Defaix. All aspects of production, from the vineyard to the winery, are undertaken by him and his family. For many years they have moved towards a sustainable and more ecological way of farming - which has resulted in them becoming fully organic, however not certified.
A moderate use of oak is clearly and a pretty nose that displays notes of saline, oyster shell and lemon zest. Richness, volume and dense flavours characterise this wine. Clean and dry finish. This great effort should drink well both young and with age.
