Chablis Eleonore Moreau 2020

For over a decade, the Moreau family has conscientiously tended to their own 13 hectares of organic vineyards, a departure from their previous practice of selling their harvest to negociants. In 2016, when Eléonore assumed responsibility for the winemaking, she introduced significant changes. She championed extended aging for all their wines, pursued organic certification, and implemented a meticulous approach to both vineyard work and cellar practices. Eléonore embodies a distinctive vision for Chablis, one that prioritizes crafting outstanding wines while preserving the integrity of their land.

The winemaking process unfolds in temperature-controlled stainless steel tanks, followed by a prolonged maturation period of 12-18 months on the lees in stainless steel vessels. This extended aging is unusual for Chablis, as many wines from the region are typically released in less than six months after harvest. Moreau's production is evenly divided between Chablis and Petit Chablis, and both are crafted with identical care and precision from vineyard to bottle. The key distinction lies in the terroir: Petit Chablis grows on Portlandian limestone, while Chablis thrives on Kimmeridgian limestone.
