The estate is on of the only Demeter certified producer in Champagne - all vineyard work is done by hand and the ploughing is done by horse!
It has a warm, rich nose with some honeyed, nutty character. Broad but still fresh with a berryish sort of quality. The palate is broad and focused with a herby, nutty richness and a buiscuitty quality, with raspberry flavours that exudes class. as well as great acidity. The dosage is very low so this is one of the driest Champagnes we have. It is long and refreshing and very well balanced.
