Whisky aficionados may well be familiar with the name Paul Launois, known for their exclusive limited releases of Ardnamurchan single malt, aged in casks sourced from this independent Champagne house.
Julien and Sarah Launois currently oversee 19 plots, totalling just over 6.5 hectares of Chardonnay vines in the Grand Cru Mesnil-sur-Oger. These vineyards have been meticulously tended by the Launois family for generations. Remarkably, it wasn't until 2015 that Julien and Sarah established Champagne Paul Launois, bearing the name of their son. Prior to this venture, the Launois family traditionally sold their grapes to their local co-operative.
Composition #5 caters to those in pursuit of opulence. It's a masterpiece of precision and focus, akin to a Ferrari rather than a Rolls-Royce – a thrilling experience that seamlessly transitions from an electrifying start to a smooth cruise. At first it appears pale and flaxen, introducing itself with prominent notes of pastry dough and orchard fruits. As it develops you'll uncover genuine complexity: hints of Maitake mushrooms, chalk, and quince, all interwoven with the classic Blanc de Blancs brioche. However, the wine's richness takes on a supporting role, only accentuating the wine's most slender and agile facets.
Composition #5 is crafted entirely from Chardonnay, with 60% of the blend originating from the 2019 vintage, 16% composed of reserve wine from barrels, and 24% sourced from reserve wine stored in stainless steel tanks. A delicate touch of dosage softens it ever so slightly.

This was my second visit to Butlers Wine Cellar and on both occasions the service has been wonderful. The young lady assisted me and my wife on a number of purchases of wine and sherry and seemed very knowledgeable and made us feel welcome.
