Philippe Colin expertly navigates the diverse terroirs of the Cote de Beaune, producing wines of finesse and elegance. Employing minimal chemical intervention and a modest use of new oak (20-25%), he lets the grapes speak for themselves. A touch of lees stirring during elevage adds depth to his wines, revealing their individuality and complexity.
The 2020 vintage in Burgundy was marked by warm and dry conditions, leading to an early harvest. Despite the warm year, 2020 was an outstanding vintage for Philippe and his team, that really took advantage of the unique conditions of the vintage to bring out opulence and purity of their fruit whilst maintaining a firm, taut minerality that is synonymous with the Domaine.
Enjoy this medium to full-bodied Chardonnay with rich seafood dishes like lobster, scallops, or Dover sole, as well as creamy poultry dishes and risotto. It also complements soft cheeses such as Brie or Camembert, and its minerality makes it a great match for dishes with earthy components like truffles or mushrooms.

This was my second visit to Butlers Wine Cellar and on both occasions the service has been wonderful.
