The Ontem projects utilise grapes from almost-forgotten and non-demarcated vineyards just south of the Douro region. The vines are 80-100 years old, and grown at 700 metres altitude, on granitic soils.
The fruit is hand harvested and foot trodden. It's a large field blend of red and white varieties, which are fermented separately with wild yeasts. The wine is aged in old barrels for 20 months.
It has amazing berry and hedgerow flavours, it is a balanced blend of rusticity and pure fruit. Very few bottles were made.
