Craven are based in Stellenbosch in South Africa. They make site specific, honest wines that let the grapes do the talking. In terms of 'winemaking' they like to keep things as simple as possible. To try and achieve the wines they want to make, they feel the best methods are being hands off, while being very hands on. In other words they pay serious attention to the wine but don't manipulate the wine.
They believe the best way to express site and fruit is to show just that. They don't use cultured yeasts, enzymes, fining agents, etc and minimal sulphur. This is made from 100% Pinot Gris, a grape variety that has a lovely natural coppery colour skin. This wine is fermented on the skins for 9 days which gives the wine a deep salmon pink/coppery colour.
The fruit is hand-picked, de-stemmed and then treated like a red wine. It's unfined and unfiltered. It smells like strawberry and raspberry jelly, or red wine gums. It's full of ripe red berry fruit, juicy and dry with some tannic grip so would lend itself to food pairing very well.
