Idun Charismatique 2021

This fantastic red comes from vineyards situated on the gentle slopes facing the south, benefiting from the cool sea breezes that ensure a slow and prolonged ripening process for the grapes. The sandstone soils contribute to moderate vine vigour, resulting in lower yields but concentrated flavours. For this particular wine, they hand-picked a blend of 55% Cinsault, 30% Syrah, and 15% Mourvedre grapes. To preserve their freshness, the grapes were carefully placed in a refrigerated container overnight.

Once cooled, the grapes were intimately mixed together and transferred to open vessels. Approximately 50% of the grapes were crushed, while 30% were destemmed, allowing for a natural fermentation process that lasted several days. Following fermentation, the wine underwent pressing and was then transferred to 300L French oak barrels, of which 20% were new. It matured gracefully for 16 months in these barrels before being bottled.

This wine showcases a delicate aroma accompanied by intricate notes of pepper, liquorice, and black cherries. The palate offers a fresh entry with hints of lavender and dark berry fruit. The finish is dry, characterized by well-balanced and refined tannins.
