This white wine is made from a blend of local varieties, Trebbiano, Grechetto and Malvasia. The fruit is picked early in the morning, harvest is finished before 10am and the fruit is placed in a cooling room to rest for one day. This helps to preserve the fresh acidity and wonderful floral aromas. The wine is then aged for three months on its lees, in stainless steel barrels. It is then bottled on a full moon, following biodynamic principles.
The flavour of the wine is completely in sync with the great outdoors. It smells of plums, melons and pears, similar to a hidden Italian garden full of fruit trees. There are floral qualities on the palate, with an underling honeyed texture, held together with notes of lemon and orange zest.
