Daniel Ramos is an Australian winemaker, known as Kapi (El Capitan), making wines high up in the Spanish Gredos mountains. He specialises in using Garnacha and Albillo Real grapes, from many specific sites, highlighting the diverse terroir in this Spanish wine region. This last year has seen some devastating bush fires, damaging many vines in this area, which makes us even more determined to support these delicious wines.
The Kapi Illuminati is an experiment which worked out well! We have stocked the Kapi Amphora wines in the past, minimal intervention wines aged in clay amphora. This, a potentially one off wine, is made from Garnacha fruit, from 60 year old vines, blended with a small amount of the white Albillo Real grape. The juice ferments naturally in clay amphora before being aged in stainless steel, no oak.
