The Roux family has been weaving its magic in Burgundy for five generations, with 70ha of plantings around the Côte d’Or and Côte Chalonnaise. The current generation, led by brothers Mattieu and Sebastien, has not only revolutionised the winery but also extended the négociant business, meaning more wines like this little beauty are gracing the Roux portfolio.
It’s a Vin de France, which nowadays means exciting experimentation far more often than cheap plonk. What excited us is just how concentrated the fruit is in Les Cotilles. Of course it’s vibrant and pure and structured, but all that freshness is delicately balanced by layers of juicy raspberries, plums, cherries and cranberries. One to be savoured with a creamy chicken and mushroom dish.
