Mimetic Garnacha Gallina de Piel 2020
Gallina de Piel is an exciting winemaking project from David Seijas, the former Head Sommelier at three-Michelin-starred restaurant El Bulli. David’s aim is to create versatile wines from Spain’s gastronomic northern regions: Catalonia, Aragon and Galicia. He works with local growers, selecting the best vineyards and indigenous grape varieties to create wines with an emphasis on elegance and freshness. All wines are low So2.
The grapes undergo cold maceration for three days, fermentation then takes place in concrete tanks for three weeks. It is then undergoes malolactic fermentation and is aged for six months on fine lees in concrete tanks with periodic bâtonnage.
This wine expresses aromas of black amber plum and on the palate it has bold notes of blueberries, blackberries, borage flower and thyme, with a menthol background and a round finish.
Ideal to enjoy with friends by the glass and with some meaty snacks. We also recommend a regional dish: Ternasco, the young lamb from Aragon, try to accompany it with some over roasted potatoes!
