The 2022 Paul Wallace Reflection Chardonnay marks their sixth vintage and is a limited production of just 1,595 litres, yielding 2,127 bottles. Positioned on a south-facing slope, the vineyard overlooks a tranquil dam, inspiring the name "Reflection" from the stunning mirror image of the vines in the water during the early morning and evening.
The Chardonnay grapes for this wine were whole-bunch pressed, and the juice was fermented in Burgundian oak barrels, with 20% of the barrels being new. A combination of 500L and 300L barrels was used for maturation, with malolactic fermentation limited to 30%. After 10 months in oak, the wine was blended and bottled on February 9th, 2023.
The Reflection Chardonnay opens with vibrant aromas of lemon curd and lime marmalade, accented by white floral notes and a hint of butterscotch. On the palate, it offers a fruit-forward experience with citrus flavours and a subtle oaky sweetness, balanced by an underlying minerality that gives the wine excellent breadth, length, and mouthfeel.
This Chardonnay embodies the purity, elegance, and texture characteristic of Elgin Valley wines. It is a versatile and rewarding wine that pairs beautifully with seafood, fresh oysters, poultry, or even a decadent piece of gorgonzola cheese. Best enjoyed slightly chilled.

This was my second visit to Butlers Wine Cellar and on both occasions the service has been wonderful. The young lady assisted me and my wife on a number of purchases of wine and sherry and seemed very knowledgeable and made us feel welcome.
