The Oak Reserve, a sibling to the original release, was allowed to rest on its lees for an extended period, resulting in a smoother integration of the oak component and an enhanced complexity. This enchanting wine offers both opulence and precise craftsmanship. They have meticulously handpicked select portions of Chardonnay grapes from their home vineyard over three outstanding vintages, gently pressing them as whole bunches. The majority of the wine was then barrel-fermented in a blend of both old and new Burgundy and Loire oak barrels, while a small portion of the base wines underwent malolactic conversion. After undergoing a secondary bottle fermentation in naturally cool underground cellars, this second-release Oak Reserve spent an impressive 60 months on its lees before disgorging. It then enjoyed an additional six months on cork to conclude its journey to perfection.

This was my second visit to Butlers Wine Cellar and on both occasions the service has been wonderful. The young lady assisted me and my wife on a number of purchases of wine and sherry and seemed very knowledgeable and made us feel welcome.
