All Salcheto wines are fermented on indigenous yeasts and bottled with no added sulphites. This Obvius Bianco is made from organic Trebbiano and Vermentino grapes under spontaneous fermentations, then bottled unfined and unfiltered. And it's pretty mind-blowing - spring-fresh, juicy, mineral, full of soft stone fruit flavours and so so drinkable.
You could go full-on Italian and drink it with spaghetti alle vongole. Or for a less Obvius choice, open a bottle with soy-drizzled sashimi!
