Ver Sacrum was started in 2012 by two friends with the concept of growing and vinifying Rhone varietals. Their winemaking ethos focuses on fresh, low alcohol, lighter skin contact, native yeast, honest, and easy drinking wines. All grapes are hand harvested and most are foot crushed with minimal intervention in the vineyards and winery and no corrections, filtration, or pump overs. They currently make wine from their small vineyard in Los Chacayes, Uco Valley where they have planted Grenache, Monastrell, Carignan, Roussane, Marsanne, Mencia, Syrah, Teroldego, and Nebbiolo.
This is a blend from 70% Viognier, 20% Marsanne and 10% Pedro Giménez (Criolla Blanca) co-fermented with airborne yeast in a single raw concrete vat. 90% of the wine is sur lie for 11 months; the other 10% is aged under flor in French oak barrels before being back blended with the main body of the wine. The final wine is then aged for a further 12 months in bottle prior to release. The results are extraordinary. An incredibly fresh wine given the winemaking techniques, yet with a texture verging on voluptuous. Lovely fresh-baked bread notes atop supple melon and pineapple aromas, rich yet precise in the mouth. Gorgeous.

This was my second visit to Butlers Wine Cellar and on both occasions the service has been wonderful. The young lady assisted me and my wife on a number of purchases of wine and sherry and seemed very knowledgeable and made us feel welcome.
