The Blanc de Blancs NV is one of our favourites, and it's double the fun in this magnum bottle. Made with Chardonnay grapes hand-harvested from low-yielding vines, this is a benchmark English Blanc de Blancs.
It has incredible fruit purity and focus, thanks to gentle pressing and fermentation in stainless steel tanks. But the secret is prolonged lees ageing after the second fermentation, which adds beautiful complexity and texture to those racy citrus and apple fruit flavours. The mousse is finesse personified and the finish is so long and clean.
If we had to pick our perfect partner for an enormous seafood platter (oysters essential), we'd be hard pushed to look past this wine.
