Odessos is one of the new wave of Bulgarian wineries, located in the city of Varna on the Black Sea coast, with a ground-breaking and very modern concept and whose story began in 2016. After travelling around the world and gaining experience at some of the most prestigious wineries in Australia, New Zealand and Chile, the brothers Georgi and Vladislav Vankov came up with the idea of creating one of the first urban wineries in Bulgaria. Love for winemaking has been in their family for generations and the idea of creating Odessos was a natural continuation of this passion.
Harvested by hand in small crates, this Cabernet Franc grapes embark on a journey of meticulous craftsmanship upon arrival at the winery. Sorted and crushed in small, open-top fermenters, they undergo a seven-day cold soak before spontaneous fermentation sets in, carefully controlled within the range of 20-22°C. Through gentle techniques such as pumping over, plunging, and pigeage, they ensure a delicate extraction, preserving the wine's integrity.
Following fermentation, it ages in Bulgarian oak barrels for eight months of aging, followed by an additional eight months in stainless steel tanks, allowing for the seamless integration of oak aromas. Crafted with minimal intervention, this wine may reveal a fine sediment, a testament to its natural evolution.
With an ABV of 13% and a balanced acidity this Cabernet Franc shines with a medium intensity and bright ruby colour. A classic Cabernet nose unfolds, offering herbal aromas of peppers alongside abundant cherry, blackcurrant, and a touch of cocoa. On the palate, juicy notes intertwine with a balanced density and acidity. Ripe cherries, chocolate, and subtle spices dance on the tongue, culminating in an impressive long, fresh finish.

This was my second visit to Butlers Wine Cellar and on both occasions the service has been wonderful. The young lady assisted me and my wife on a number of purchases of wine and sherry and seemed very knowledgeable and made us feel welcome.
