100% Pinot Noir
The beautiful rose gold colour of our Blanc de Noirs comes from the gentle whole bunch pressing of Pinot Noir grapes (hence, “white of blacks”). Coupled with extended on-lees ageing this has created a rich, complex and full sparkling wine with mature autolytic character and hints of red fruit notes.
This refreshingly classic Pilsner lager is brewed using a combination of traditional German hops including Saaz and Tettnanger, producing a mild, fresh, citrus aroma and an elegant bitterness.

A second fermentation in oak barrels
This year Burning Sky have added eldeberries and blackberries to their Autumn Saison making it a toptastic treat for those cooler days.
The Blanc de Blancs 2011 comes from the oldest vines in the vineyard. It has aromas of toffee, brioche and mandarin. The flavour is creamy with almond and a hint of lemon zest. Only 2500 bottles of the Blanc de Blancs 2011 have been produced.
In colour, the crystal clear gold colour tends almost to the green. Its fresh attractive nose is generous, with a lemon character and note of passion fruit. A lovely minerality in the mouth indicates a good, balanced structure, with an intense backbone and very long finish with some white pepper notes.

60% Pinot Noir, 22% Chardonnay, 18% Pinot Meunier.
Rich and golden in colour, with a delicate mousse and aromas of honeyed citrus fruits, white peach and brioche in the glass. The palate is suffused with red apples, poached pears and bright red berry fruit, displaying more developed notes of freshly baked bread and apple pie and a long, rounded finish.
