From the Australian Pyrenees in Victoria, this regional classic has depth, elegance, and structure. A beautifully sparking wine with a round rich mouthfeel and all the typical shiraz flavours.
The grapes are harvested in the cool of the night and transferred into an open fermenter to ferment for 5 days on skins. The wine is then aged in French oak barriques for 10 months before being prepared for traditional method. After approximately 14 months on lees, the wine is disgorged and prepared for secondary fermentation in the bottle.
Rich, dark fruit, and chocolate aromas combine with a vibrant blackcurrant palate, complemented with spicy notes of aniseed and pepper. On the palate, the sweetness has married perfectly with silky tannins for a long, velvety, cedary-oak texture.
Pair with Chocolate- Cherry desserts, roast poultry or ham.

This was my second visit to Butlers Wine Cellar and on both occasions the service has been wonderful. The young lady assisted me and my wife on a number of purchases of wine and sherry and seemed very knowledgeable and made us feel welcome.
