Chablis 1er Cru Vaulorent, Domaine Nathalie et Gilles Fèvre 2022

Nathalie and Gilles met at university and the couple decided to establish their own estate in 2004, where their daughter Julie has now joined them. The Fèvre name is synonymous with Chablis – and Gilles is related to the William Fèvre line via his grandfather.  

Gilles’s great-grandfather had planted vines around Fontenay près-Chablis, and until 2004 the Fèvre family was a significant supplier of La Chablisienne (where Nathalie also worked as an oenologist). Today, Gilles works on the viticulture side, while Nathalie and Julie are in charge in the winery.

They employ some organic practices and the vineyards are certified Haute Valeur Environnementale Level 3 (the highest level available).

Situated just beside the Grands Crus, the Vaulorent it is considered to be a unique terroir. This wine has great fullness, the same as the 1ers crus Fourchaume, with the added charm and elegance of top quality wines.

The winemaking here is all about preserving purity, with very little oak used at all. Vinification and ageing on fine lees during 12 months (minimum) 20% in oak (new barrels) and the rest in air-conditioned stainless steel tanks. 

On the palate it is fruity, lightly toasty, round and mineral. Perfect with seafood platters, also mushroom based dishes, veal or goats cheese.
