A benchmark introduction to classic Chablis, this wine from the esteemed Droin family captures the purity and minerality that define the region. The vineyards sit on the famed Kimmeridgian soils, a mix of limestone and grey marl rich in fossilised oyster shells, giving the wine its unmistakable saline edge and flinty character.

Viticulture is carried out with a balanced, thoughtful approach, including regular ploughing to maintain healthy soils. In the cellar, the focus is on precision: gentle pneumatic pressing, natural settling, and fermentation with indigenous yeasts in stainless steel to preserve clarity and terroir expression. The wine then undergoes malolactic fermentation and is aged for 8–10 months before bottling.

In its youth, this Chablis is lively and generous, with bright notes of lemon, green apple and a distinctive oyster shell minerality, alongside hints of flint. The palate is crisp and finely structured, with refreshing acidity and a clean, mineral-driven finish. With time, it develops deeper complexity, showing smoky gunflint and subtle earthy nuances.
