Delavenne have been family owned since 1920, they produce wine from their own Grand Cru vineyards from Bouzy, Ambonnay and Cramant. They make their wines very naturally, so do not use any chemicals in their vineyards and the wine is vegan. This is very precise wine making. They blend only from two different vintages, largely from single plots.
This is a blend of 60% Pinot Noir and 40% Chardonnay. No malolactic fermentation, no cold flash pasteurization so they can preserve all the best of the terroir, they let the wine make itself. It is vinified in Stainless Steel.
Notes of apple fritter, fresh apples and lemon drops. Enjoy it with sautéed scallops, rich fish, pork, mild and soft cheeses.
