Derrumbes San Luis Potosi Mezcal 70cl 43%

A truly distinctive mezcal that showcases one of Mexico’s most unusual and fascinating regional styles, Derrumbes San Luis Potosí is made high on the Central Mexican Plateau in the rugged state of San Luis Potosí.

Made exclusively from wild Agave Salmiana, a variety native to the region, this mezcal is remarkable for both its flavour and its rarity. Although abundant in the landscape, Salmiana delivers an exceptionally low yield, requiring up to four times more agave than blue agave to produce the same volume of spirit. Grown in calcareous, chalk-rich soils, it captures a striking sense of place, with mineral and saline notes playing a defining role in its profile.

Production takes place at a traditional hacienda using time-honoured methods. The agave is cooked in above-ground hornos, rather than underground pits, which means there is virtually no smoky influence. After cooking, the hearts are crushed by tahona, fermented naturally with wild yeasts, and double-distilled in small copper pot stills before bottling at 43% ABV.

Bright, vibrant and beautifully expressive, with aromas of green herbs, fresh agave and citrus zest. On the palate, expect a striking mineral edge with chalky, saline notes, hints of lime peel and white pepper, and a crisp, mouth-watering freshness. The finish is long, clean and gently savoury, with no smoke to obscure the purity of the agave.
