“Eurythmie” meaning harmony and balance, is a fitting name for this poised and expressive Pouilly-Fumé from Jonathan Didier Pabiot, one of the Loire Valley’s most thoughtful and terroir-driven producers. Sourced from carefully selected parcels around Pouilly-sur-Loire, this cuvée captures the tension between precision and depth that defines the very best Sauvignon Blanc from this historic appellation.
The vineyards sit on classic flinty soils, lending the wine its signature smoky, mineral edge. Fermentation and ageing are carried out with great restraint to allow the purity of fruit and the character of the site to shine through, resulting in a wine that is elegant, layered and quietly complex rather than overtly aromatic.
Fresh and refined aromas of citrus zest, white peach and elderflower are interwoven with subtle notes of flint and wet stone. On the palate, the wine is taut and focused, with bright lemon and grapefruit fruit balanced by a savoury, saline minerality. The finish is long, precise and gently smoky, leaving a lingering sense of freshness and finesse.
An excellent partner for seafood and refined vegetable dishes, think grilled sea bass, scallops, asparagus or goat’s cheese. Equally impressive on its own for those who appreciate Sauvignon Blanc in its most elegant, mineral-driven expression.

This was my second visit to Butlers Wine Cellar and on both occasions the service has been wonderful. The young lady assisted me and my wife on a number of purchases of wine and sherry and seemed very knowledgeable and made us feel welcome. Having tasted them she was spot on with her comments on each bottle. I would highly recommend anyone to use this shop.
