One of California’s most exciting and boundary-pushing sparkling wine projects, Ultramarine is the vision of Michael Cruse, a winemaker whose meticulous, almost scientific approach is reshaping expectations of American fizz. Working from a modest winery space in Petaluma, Cruse draws inspiration from the great grower Champagnes, applying the same hands-on, detail-driven philosophy to exceptional vineyard sites across the North Coast.
The Michael Mara Vineyard is perfectly suited to Chardonnay for sparkling wine, where cool coastal influences help preserve freshness and precision. The result is a wine that is focused, expressive and uncompromising in quality.
On the nose, it is bright and finely detailed, with aromas of lemon zest, green apple and crushed stone, alongside subtle brioche and almond notes from time on lees. The palate is taut, mineral and beautifully textured, combining crisp citrus and orchard fruit with a saline edge and vibrant acidity. A fine, persistent mousse carries through to a long, elegant finish.
Super rare, we only get an allocation of 30 bottle a year for the whole of the UK.

This was my second visit to Butlers Wine Cellar and on both occasions the service has been wonderful. The young lady assisted me and my wife on a number of purchases of wine and sherry and seemed very knowledgeable and made us feel welcome.
