‘Méthode Ancestrale’ ('Pét-Nat') Sparkling wine from Austria, which celebrates the tension and aromatics of Riesling, together with the texture unique of Roter Veltliner.
The wine was bottled before primary fermentation was complete and the excess CO2 was retained and dissolved into the wine giving a softly sparkling, creamy white wine. It then spends a period of maturation Sur Latte – adding gorgeous texture and mouthfeel – before each bottle is carefully hand-disgorged.
Notes of wildflower and herbs on the nose are enhanced by a palate packed with citrus peel, green apples and ripe orchard fruits. A beautifully made Pét-Nat with a clean and refreshing finish.

This was my second visit to Butlers Wine Cellar and on both occasions the service has been wonderful. The young lady assisted me and my wife on a number of purchases of wine and sherry and seemed very knowledgeable and made us feel welcome. Having tasted them she was spot on with her comments on each bottle. I would highly recommend anyone to use this shop.
