This is what you should be drinking today and in general in this hot weather. It is one of my favourites with seafood, especially tuna in oil, anchovies, turbot and mackerel. I would highly recommend you pop to see Kelly at Ofishly Healthy on St James's Street and get some fresh mackerel for your BBQ then pop in and get a bottle of this before you hit the beach.
This wine is a very special and unique style of Txakoli with 6 months lees ageing. It is spritzy and has high acidity so brace yourself. This wine is served in ALL the top restaurants in this food mecca region of Spain on the Basque coast. I was lucky enough to visit the winery and went to the best turbot restaurant in town, possibly the best dining experience of my life!
