Edouard Brun is a small, family-owned Champagne House in the revered Grand Cru village of Aÿ. Founded in 1898, the House has stepped out of the shadow of history in recent years, evolving from a very traditional approach to a modern and fruit-driven style. The wines are all the better for it.
This wine is primarily sourced from the renowned Brun's vineyard in Ay. It's a balanced blend of 50% Chardonnay and 50% Pinot Noir. The Pinot Noir grapes undergo a double fermentation process in oak barrels, while the Chardonnay is carefully fermented in stainless steel tanks. After this meticulous crafting, the wine is aged for an impressive five years in the bottle, giving it ample time to develop a host of nuanced secondary flavours.
This wine is marked by a distinctive profile of honey and spice notes, complemented by delicate floral undertones. It offers a rich and substantial mouthfeel, brimming with intensity and depth, and culminates in a lingering, satisfying finish. To round out the experience, a dosage of 9g/L imparts just the right touch of sweetness.

This was my second visit to Butlers Wine Cellar and on both occasions the service has been wonderful. The young lady assisted me and my wife on a number of purchases of wine and sherry and seemed very knowledgeable and made us feel welcome.
