At the foot of Ditchling Beacon, Everflyht is a small vineyard producing single estate traditional method sparkling wines using grapes farmed under regenerative methods. Regenerative farming works to ensure long term soil health and promote biodiversity, rather than relying on chemical fertilisation and pesticides for short term benefits.
The Cuvee Brut is a blend of 60% Chardonnay, 30% Pinot Noir and 10% Pinot Meunier. The base wines are fermented in a mixture of stainless steel and oak barrels, aiming to bring out the best character of each different clone and block of their vineyard. After secondary fermentation the wine is aged for 24 months in bottle before disgorging.
The style is precise, dry and elegant - an exceptional aperitif or pairing for shellfish. Red apple and lemon curd notes with hints of biscuit and crumble topping. A long finish ends with a refreshing minerality.

This was my second visit to Butlers Wine Cellar and on both occasions the service has been wonderful. The young lady assisted me and my wife on a number of purchases of wine and sherry and seemed very knowledgeable and made us feel welcome.
